Dinner in Galway with Poets and Writers

Dinner salad with borage and mango
This isn't just any salad, this is a salad picked by poets this morning. My friend, poet Geraldine Mills, and her sister, Tina, have "a tunnel" which they've built and filled with greens, tomatoes, cucumbers, and zucchini. With the exception of one perfect mango and a flutter of cashews, everything in this bowl was poet grown.
